The term salt in reference to seasoning of food mainly refers to sodium chloride or more commonly called table salt.
There are two sources of table salt:
1. Mined Salt
This salt is harvested by forcing water into a mine to create brine (salt/water mix). The brine is then evaporated leaving cubes of salt.

2. Sea Salt
Salt separated from sea water by evaporation of the water. This process is more costly than the mining process. Sea salt is is usually less refined than other salts. Depending on where the seawater is collected, sea salt contains different minerals mixed with sodium chloride. For information about the varieties of sea salt, see SEA SALT VARIETIES.
